What a joy is it is to have one of these cookies with a cuppa- the spiced flavour of wintery cinnamon, nutmeg and ginger is complemented by the sweet, chewy toffee contrasting with the sharpness of apple cubes doted throughout! These Cookies taste wonderful; with subtle hints of wintery cinnamon, nutmeg and ginger and the sweet caramel like taste from the toffee, they are perfect for those who love sweet treating with a cuppa. But there’s more; cubes of apple are nestled throughout the cookie adding a sharpness to contrast the sweetness, creating the perfect combination of flavours!

These cookies are a ‘cakier’ texture than some other cookies. Crunchy squares of apple are nestled in between the cookie before reaching the wonderfully chewy toffee centre! The apple in the cookies adds a little moisture to the mixture; so we recommend patting the chopped apples with a paper towel before adding to the mixture (to soak up any residual moisture from the apple).

These cookies are quick and easy to make, the perfect recipe to bake with the little ones! Allow 15 minutes to prepare the cookies (the longest part really is peeling and chopping the apples!) and 10-15 minutes to cook!

In our home, these adored cookies rarely last a few days before being eating up and thoroughly enjoyed! However, if you want to store; keep in an airtight container for up to 5 days.

To freeze Homemade Spiced Toffee and Apple Cookies:

These cookies can also freeze, great if you want to make ahead and pre-prepare. I recommend freezing them uncooked- simply lay each cookie on a lined baking tray and place in the freezer. Once frozen transfer each cookie into a freezer bag and label. Store for up to three months, whip out and cook before popping the kettle on and treating the family to freshly baked cookies! Note: Cooking time must be adjusted when baking from frozen; the time taken to cook will increase so do not forget to add an extra 5 minutes or so to the cooking time.

These cookies are easy to make and perfect for any cooking experience or ability. They are also the perfect recipe to make with little ones, as the instructions are quick and easy to follow!

Equipment:

To make these Homemade Spiced Toffee Apple Cookies you will need; A chopping board, peeler, Large Mixing Bowl, Electric whisk/stand mixer, weighing scales, spatula and usual kitchen utensils.

Homemade Spiced Toffee and Apple Cookies

Ingredients to make 12 Homemade Spiced Toffee and Apple Cookies:

180g Soft Brown Sugar

100g Butter (softened)

½  tsp Ground Nutmeg

2 tsp Ground Cinnamon

½ tsp Ground Ginger

1 tsp (or 1 cap) Vanilla Essence

½ tsp Baking Powder

2 Granny Smith Apples (peeled and chopped)

12 Toffees- these toffees work really well for older children and adults. For baking with younger children, I recommend using fudge instead, as the toffees can be really hard and chewy! My toddler ate the apple cookie but did not eat the toffee!

1 egg

250g Plain Flour

A pinch salt

Instructions:

To start, Preheat the oven to 180 c, and line a baking tray with parchment paper.

Next peel both apples and chop into small squares, before covering with a clean paper towel to soak up residual moisture (I tend to pat the paper towel over the apple)

Next beat together the butter and sugar with an electric mixer.

Add the egg to the butter and sugar and beat again until well combined.

Then, stir in the flour, cinnamon, nutmeg, ginger, vanilla essence, baking powder and salt until combined.

Next add in the chopped apples (ensuring that residual moisture has been soaked up) and use a spatula to gently fold into the mixture.

Using a scoop or your hands to gently create 12 balls of mixture and place onto the lined baking tray.

Then use the palm of your hand to flatten each ball of mixture.

Unwarp each toffee and then gently nestle one toffee into the centre of each cookie (you may need to press on the toffee to ensure it is nestled properly!).

Then place in the pre-heated oven and cook for 10-15 minutes (you may like to check on the cookies halfway through cooking and using the back of the spoon press each toffee to help it melt!).

The toffee centre is a wonderful chewy, sweet addition to this recipe; however, I do advice using an alternative if younger children are enjoying these. Small bits of fudge or caramel work well in this recipe or stemmed ginger!

Yes, you can! The reason I like to use Granny Smith apples is because of their sour taste, which adds a perfect flavour combination with the sweet toffee, and therefore they are my favourite variety to use! However other varieties of apples would taste good too, use what you have and let me know how it tastes!
