Buttery Vanilla and Cinnamon Apple Tarts with an Apricot Glaze

Apple tarts with apricot jam glaze are not only beautiful to look at, but they taste amazing too!
Sweet apple slices cocooned in crispy pastry, with subtle hints of vanilla and cinnamon, gently coated in an apricot glaze- what could be better!? These tarts are the perfect treat for parties and picnics, as they are beautiful to look at with a floral like display of apple and are a perfect size for having on the go! They also make the most wonderful family dessert, served with a dollop of vanilla ice cream, a great treat for an evening in!

Equipment

  • 2 10cm Tart Tins A larger tart tin works if you want to create one big sharing apple tart!
  • 1 Rolling Pin
  • 1 Frying Pan
  • 1 Pastry Brush
  • 1 Measuring Scales
  • 1 Saucepan
  • Usual Kitchen Utensils

Ingredients
  

  • 1/3 sheet Ready Rolled Shortcrust Pastry You will need approximately 1/3 of a sheet of ready rolled Shortcrust Pastry
  • 2 Apples We used Braeburn apples, however any other eating apple will work well too!
  • 1 ½ tsp Vanilla essence
  • 2 tsp Ground Cinnamon
  • 30 g Butter
  • 1 tbsp Granulated Sugar
  • 43 g Apricot Jam
  • 2 tbsp Water

Instructions
 

  •  To start, preheat the oven to 150 c.
  • Next peel both apples and then portion into thin slices
  • Add the sliced apples to a saucepan, along with the butter, cinnamon, vanilla essence, and sugar.
  • Toss the ingredients together, on a gentle heat for approximately 5 mins (until the apples are soft and coated).
  • Using butter or margarine grease both tart tins.
  • Then, place the tart tins on the rolled-out pastry, gently pressing to create an outline circle.
  • Next, use a knife to cut around the outline (adding a few cm around the rim) and arrange the pastry into the tins.
  • Use your hands to position the coated apple slices in a circular pattern around the outside edge of the prepared tart tin, working into the centre. This will create a floral pattern!
  • Bake the tarts in a preheated oven for 45-55minutes,until they are golden brown. Once cooked, leave to cool for half an hour.
  • To create the apricot glaze, stir together the apricot jam and water in a saucepan over a moderate heat, until the jam has melted, and the consistency is smooth
  • Using a pastry brush, gently glaze each tart! Enjoy!

Notes

You can adjust the quantities to make as many tarts as you have room for!
